Hi Everyone! I can’t believe we are coming down the stretch to the end of summer! I am not ready!!! I picked up these incredibly beautiful peaches this week and decided to make an appetizer out of them. The combination of the sweet and tangy fruit with smooth honey and the bright taste of goat cheese is a winning combination. The bonus is that it looks so pretty on the plate. Now…all you need is a light Sauvignon Blanc and you have yourself a party!
Fresh, local goat cheese
Fresh baguette, sliced thinly
basil leaves for garnish
Move rack in oven to the second shelf. Preheat Broiler. Place the bread slices on a baking pan and place in oven. Watch the toasts carefully, because you don’t want to burn them. (trust me…ask my smoke alarm. This is not the time to multi-task!!!) When the toasts are a nice golden brown, remove them from the pan and place on a pretty platter. You can brush them with a little olive oil or butter, but this isn’t needed.
MEanwhile, spread a bit of the goat cheese on each toast. Top with a peach slices and drizzle (I love that word) honey on top. Add some basil for garnish. Done!
What do I love about this recipe? I love when I can use seasonal, fresh fruit in any recipe. Tasty!
