Spicy Sweet Glazed Shrimp

Another Friday night… another excuse to have friends over for dinner. I love summers. I love my friends. I love cooking for my friends. I love cooking for my friends in the summer for dinner….Okay…that could be annoying, but I think I made my point. The one thing I didn’t add to that obnoxious rant was that I really don’t like being stuck in my kitchen when my friends are here. I like to be with them enjoying their company. So…when we entertain, I do try to do as much prep and cooking before anyone is even close to arriving. ENTER this recipe. I made the marinade ahead of time, added the shrimp a couple of hours before they came, then BOOM…it was done after about 20 minutes in the oven. Easy and tasty and I had lots of great conversation with our friends. The perfect night. Did I mention I love to have friends here for dinner ♥? 🙂

Spicy Sweet Glazed Shrimp

Spicy Sweet Glazed Shrimp

2 lbs. shrimp, peeled, deveined

1/4 cup apple cider vinegar

1/4 cup olive oil

<1/4 cup soy sauce

<1/4 cup water

2 Tbs. brown sugar

2 Tbs maple syrup

1/2 tsp lemon juice

1/2 tsp lime juice

1/2 tsp red pepper flakes

3 Tbs. green onions, chopped

2 tsp cilantro, chopped (optional)

salt

pepper

Add everything above (except the shrimp of course) to a blender and process until combined. Put in a plastic baggie. Put the shrimp inside the bag and seal tightly. Swish the shrimp around so that it is covered . Allow to marinate for a bit…probably 30 minutes to 2 hours.

When time to cook…preheat oven to 425. Remove the shrimp from the marinade and bake on a baking pan for about 15-20 minutes or until the shrimp are no longer pink inside. I used larger shrimp so mine took a while. While that is baking, add the remainder of the sauce to a sauce pan and bring to a boil. Heat until it thickens. When shrimp is done, serve. (I served mine on top of Jasmine rice.)

What did I love about this recipe? Well, it didn’t take long to throw together and it was tasty. I made it for company and I think they liked it too!

What didn’t I love about this recipe? No leftovers!!!

  1. Made this today, and ohhh wow…is it good! I did add 1 extra thing…abt 1 teaspoon of Tony’s! We will have this one again and again and again!
