I am taking a mini-break from working with tomatoes to write this blog today. I have about 25 plants and HOLY COW are they keeping me busy with tomato recipes! It seems like every day I either cook with them or freeze them in one way or another…it is wonderful! It is so fun to finally have a real garden!!!
Yesterday, I made these oven-dried tomatoes with the crop I harvested in the morning! They were incredibly easy to make and now I have some for us and for my boys to take home with them!
Cherry tomatoes, halved and seeded (mostly)
approx. 1 tsp white sugar
approx. 1/2 tsp kosher salt
approx. 1/2 tsp freshly ground pepper
approx. 1/4 tsp granulated garlic powder (not salt)
fresh herbs of your choice, roughly chopped
Well this is hardly a “recipe.” But here is what I did…
Preheat oven to 225 degrees. Line a baking sheet with parchment paper. Lay the tomatoes on the paper with the halved side up. (If using large tomatoes, don’t slice them too thick…) Sprinkle them with all the ingredients and put in the oven for at least 2 hours. I started with 2 and decided I wanted mine more on the dry side so I let them stay in the oven with the heat on for another hour or two then turned the heat off and let them sit in there all day.
After the tomatoes are as dry as you like, remove and use immediately or you can put into jars and top with olive oil. I froze mine this way.
What do I love about this recipe? I loved how it was soooo easy!
What didn’t I love about this recipe? Well, it takes a lot of tomatoes! I made three large cookie sheets and it yielded about 4 half pints of tomatoes. But….a little bit is better than nada! (cue singing voices)
