Meatloaf for Michael

“Hey Ma! The Meatloaf!” When I hear that line (from Wedding Crashers) I know it is time to whip this together!

To be honest, I am personally not really a meatloaf person. I like other kinds of meat, but meatloaf just isn’t my thing. However, my guys like it so I make it for them! I always make a double recipe so I can freeze one and this recipe is the one they like! Michael is my “bacon boy” so I add that for him. (I don’t use it on the top when he is away at school).

Meatloaf

3 lbs ground sirloin

1 cup 3 cheese blend

1 cup salsa

1 cup Italian breadcrumbs

2 eggs

6 tsp diced garlic

2 tsp dried minced onion

1 tsp salt

1 tsp pepper

1/2 tsp ancho chili powder

2 tsp dried basil

1 tsp salt- free Mrs. Dash Seasoning

4 slices half-cooked bacon

tomato sauce, spaghetti sauce, pizza sauce or ketchup for top

Preheat oven to 350 degrees.

Combine everything except bacon and tomato sauce in a large bowl and mix with hands until combined. Split mixture into 2 and place into two 9 x 5 inch loaf pans. Top with the tomato sauce and bacon. Bake for 55-70 minutes. Internal temperature should be 160 degrees and is no longer pink in the middle.

What did I love about this recipe? Well, I  love that my guys like this recipe. It is fast, easy and I can make it ahead.

What didn’t I love about this recipe? Well, I am not really a meatloaf kind of gal…but if you are, you will like this!
