Hi Everyone! It feels like it has been a long time since my last post! It has been a busy little summer here at the house with moving one back to the nest for the (from college), moving one out of the nest to find her wings, and fixing up the house little by little. Squeeze in there some work, planning and going on a few mini vacations…and wow! Somehow it is August already! Not sure how that happened so quickly, but it did!
Anyway…here is a quickie…The most important thing here is fresh ingredients. I hope you have a garden to pick the tomatoes right off the vine, but if not, please find the freshest, most ripe tomatoes you can find. Then find an amazing avocado that is just waiting to be sliced! Grab some basil! Here we go!
Summer Caprese Salad with Avocado
2 -4 ripe tomatoes, sliced
1 avocado sliced
freshly julienned basil (Or leave them whole if you prefer)
5 whole basil leaves for garnish
fresh mozzarella (I used mini ,fresh, mozzarella balls)
extra virgin olive oil
(reduce your own balsamic until it becomes syrupy, or buy it :))
Freshly ground black pepper
red pepper flakes, dried
This one is as simple as layering the tomatoes and avocado, then the basil and mozzarella. Now splash just a bit of olive oil. Top with the glaze, salt, pepper and red pepper flakes. Serve!
What do I love about this recipe? Well, it isn’t really much of a recipe! It really is just a gathering of summer veggies (fruits?). In my opinion, this is the best way to eat fresh tomatoes! Preferably with a glass of wine too!
What don’t I love about this recipe? OH, Come ON!
