Asparagus Salad

I just love a nice, cold salad at any get together or picnic, don’t you? This asparagus salad is kind of unique with the different ingredients it has. We really love it.  I have made it with goat cheese instead of the feta and it is great that way too. I have made it without the fruit and it is still delicious. Give this one a try and let me know what you think!

Asparagus Salad

2 lbs. asparagus, cur into 2″ pieces

2 Tbs. lime juice

2 Tbs. Dijon

3 Tbs olive oil

1/4 cup EACH chopped basil, chives, cilantro

1/2 cup feta, crumbled

1 thinly sliced shallot

1/2 tsp salt

1/2 tsp pepper

1/2 cup sliced almonds, toasted

optional…1 mango, diced, 1 peach diced

Drop the asparagus into boiling water. Cook 2 minutes then drain and rinse with very cold water. Plunge into an ice bath. After a few minutes, drain the asparagus.

Whisk the lime juice, olive oil, Dijon, and herbs. Add the remaining ingredients. Stir together. Add the asparagus and gently mix together.

What did I love about this recipe? I love the way I can kind of play around with the ingredients, herbs, fruit, etc. It is such a different and delicious side (or main dish).

What didn’t I love about this recipe? I have to really keep an eye on the asparagus so that  it is just tender…not too overcooked.
