I went to the grocery store today to get inspired, and boy, did I ever! I love when I see things in the produce section that I havent seen before and really want to try. I spotted this corn at Whole Foods. They called it Red Corn. I bought it!
I brought it home, did a bit of research on red corn and it turns out you can cook it like other corn on the cob. The only thing is that the color of the corn might change if it is boiled. I wanted to keep the red color, so I tried baking it in foil with some secret ingredients. YUM! (Okay…so they are not so “secret.” It just sounded good… ha)
Baked Red (!) Corn on the Cob
Red corn on the cob, husk and silk removed
juice and zest of one lime
1/4 cup melted butter
1/4 cup cilantro chopped
salt and pepper
Preheat oven to 400 degrees. Place the corn in the foil after slathering it in the butter mixture. Seal the foil tightly and place on a pan in the oven. Bake for 30 minutes. Eat.
What did I love about this recipe? I am all about making things ahead of time and that is exactly what you can do with this corn…prep it all up then throw it in the oven a half hour before dinner! EASY!
What didn’t I love about this recipe? Well, the taste was not that much different from traditional yellow corn, but it was different and I will most definitely make it again!
