Garlic Chicken Thighs

I am not sure how many times a week I ask my gang what they want for dinner. I used to ask pretty often when my kids all lived here…but the only answer I got was “TACOS!” After a while, I stopped asking…because well, I really don’t like making tacos for some reason…not sure why. ANYWAY…I did ask Kevin what he wanted the other day and he said “something with chicken thighs.” I used to make him the thighs all of the time, then we gave into the healthy chicken breasts…and alas…no more thighs. But guess what??? I made these and man, they were so good! I just chopped up a bunch of garlic, added it to stuff in my cabinet and BOOM! Delicious, moist chicken thighs were on the plate in no time at all.

I will make these again…and I will use this sauce on salmon and chicken breasts as well. It is quite tasty!

Garlic Chicken Thighs

1/4 cup olive oil

1/4 cup butter

7 cloves garlic, minced

2 Tbs low sodium soy sauce

2 Tbs. honey

1 Tbs. balsamic vinegar

1/2 tsp minced dried onion

1/2 tsp sea salt

1/4 tsp pepper

3 Tbs chopped fresh parsley

1 tsp chopped fresh chives

6 chicken thighs, clean and dried

Preheat oven to 350 degrees. Line a baking pan with foil.

Add everything but the chicken to a microwaveable bowl. Cook on High for 2 minutes. It will be bubbly.

Put the chicken on the pan. Spoon the sauce onto the thighs, reserving a bit for basting.

Cook for 20 minutes, coat with more sauce then broil for 10 minutes or until chicken is cooked through.

What did I love about this recipe? We really enjoyed the mild garlic taste. I thought it would be more “garlicy,” but it really wasn’t. I will definitely make it again and will try the same sauce on chicken breasts as well.

What didn’t I love about this recipe? Nothing. It was really good and very simple.

  1. I am going to make this this week. I have 7 people for dinner every Wednesday and this is priced right as well as quick. Question. Can skinless, boneless thighs be used and just baked less or do you need the fat from the skin?
