…Another California barbecue and another delicious salad to take along! Outdoor dining with friends truly is a weekly occurence here…and I love it! (for those of you not here in CA, this means…nearly no humidity, almost no mosquitos, no other pesky things flying around, and perfect temperatures..).I think every year Kev and I say, “This is the best summer I have ever felt!”
I brought this salad to my friend’s house last weekend. I hope you make the dressing…it makes enough for a few nights…and it is so good!
Summer Salad with Mango Sesame Dressing
Anything you like in your salad….fruits, nuts, etc.
1/2 cup vegetable oil
1/2 cup white vinegar or any good vinegar
(I used a peach chardonnay vinegar I got at HomeGoods…YUM!)
1/3 cup white sugar
2 Tbs. sesame seeds
1 Tbs. orange juice
1 tsp salt
1 tsp ground mustard
1 tsp dried onion
1 mango, diced
1 handful strawberries, cleaned and hulled
Place clean greens in a large salad bowl. Add anything else you like in your summer salad…berries, feta, nuts, etc.
Make the dressing by adding everything (including the diced mango and strawberries) to a blender and giving it a good whirl for a minute or two. You don’t want this dressing chunky. Smooth is the consistency you are looking for here.
Let the dressing sit in the refrigerator for a few hours so it can come together a bit.
When ready to serve, just mix the dressing in with the greens and you are good to go…deeeeee-LISH!
What did I love about this recipe? I loved that it had the mango flavor and didn’t feel like a “heavy” dressing…
What didn’t I love about this? Nada.
