Another birthday dinner here last weekend. The request was salmon. I was getting tired of the two ways I make it and wanted to do something different…and with nuts. So I ground up some pecans and added a bunch of my favorite ingredients and put them all in a bowl and mixed them up and then pushed them onto the fish. I made it early in the afternoon and let it sit, covered in the frig, until about 20 minutes before I wanted to serve dinner. I threw this in the oven and BAM! Ten minutes later we had what is now my favorite way to eat this salmon (or steelhead ….I like the steelhead better). This was super tasty, super easy and super fast. “It’s a good one!” as my son says!
Pecan Crusted Salmon (or Steelhead)
MIX together then BRUSH on 4-6 salmon fillets:
2 Tbs. coarse ground Dijon mustard
2 Tbs. butter, melted
5 tsp maple syrup
1 Tbs soy
3/4 cup finely chopped pecans, toasted lightly
1/4 cup panko crumbs
1 Tbs parsley
1 tsp chopped rosemary
salt and pepper
Push the nut mixture onto the fish and allow to sit at least 10 minutes. I put mine together early.
Bake in a 400 degree preheated oven for at least 10 minutes…if your fish is thinner than 1″ you will want to bake it for less time.
What did I love about this recipe? I loved it all…it tasted great and it was so fast and easy. My dinner guests loved it and my family did too. It was great and plan on making it again very soon.
What didn’t I love about this recipe? Nothing, really. I don’t usually cook fish indoors, but this was fast and super tasty…definitely a keeper.
