We were invited to our friend’s house on Saturday night and after a little arm-wrestling I informed them we would bring a salad. Frank and Carrie never want us to bring anything so every time we have dinner at their house we have to “duke it out.” I wanted to bring a salad with a lot of spring fruits in it, so this is what I brought. It is a mixed greens salad (half spinach, have baby lettuces) with a few handfuls of the berries I had in the ‘frig. I toasted up some sliced almonds and kind of winged it on a honey-mustard dressing. I used half mayo (light) and half nonfat Greek yogurt. You could probably use all of one or the other…or full fat of either…I can’t imagine it would taste all that different. I try to use Greek yogurt in anything I can get away with…it is so darn good for you! Anyway….the salad was so pretty and definitely alive with the taste of spring and summer! I hope you like it too!
Mixed Salad with Berries and Honey Mustard Dressing
Honey Mustard Dressing
1/4 cup light mayonnaise
1/4 cup plain Greek yogurt
2 Tbs stone ground Dijon mustard
2 Tbs honey
1 Tbs. apple cider vinegar
1/2 tsp salt
couple grinds of black pepper
Combine all ingredients in a blender or mix by hand. Refrigerate to let meld in ‘frig.
8 ounces mixed greens
2 green onions (scallions) chopped finely
2 slices bacon, cooked and crumbled
handful blackberries, blueberries and strawberries (slice strawberries)
1/3 cup sliced almonds, toasted
Combine all salad ingredients and then when ready to serve add the dressing. Mix thoroughly.
What did I love about this recipe? I love salads with fruit and nuts. The bacon was a last-minute addition. Bacon makes everything better according to my son, Michael. ♥ If you are a vegetarian or don’t have bacon, don’t worry about it.
