Have you tried Pearl Couscous yet? We kind of fell into it after my friend made Israeli Couscous for us. We really prefer the pearl couscous over the original couscous now. It has a small bead texture and is just kind of pretty compared to the old. Of course, you can make this any old way you like…plain, with pesto or sauce, etc…the way I make it is kind of simple…
1 Tbs. butter
1/4 tsp cinnamon
1 bay leaf
1 1/2 cup pearl couscous
1 3/4 cup vegetable or chicken broth or stock
1/4 cup golden raisins or mixed colored raisins (Trader Joe’s)
1/2 tsp salt
1/4 tsp pepper
Melt the butter in a medium sauce pot. Add the cinnamon and bay leaf. Stir. Add the couscous and stir until the couscous takes on a golden color. Add the vegetable broth and bring to a boil. Cover, turn to medium low, and simmer until the water is absorbed, about 10 minutes. Add the raisins, salt and pepper and allow to sit for a few minutes to allow the raisins to soak up some of the extra liquid.
What did I love about this recipe? It is super easy and the couscous is quite versatile.
