Mixed Berry Lemon Muffins

We have new neighbors behind us and I want to bring a little gift over to welcome them. I whipped up some of these muffins this morning and will bake up a tray of cookies to add as well. It will be fun to get to know them and their young children who are bringing new life and energy to the neighborhood. How fun!

Berries in a Lemon Muffin with a Crumb Topping

Mixed Berry Lemon Muffins

Muffin:

3 c. flour

1 c. sugar

1 TBs. baking powder

1/2 tsp sea salt

1 tsp baking soda

1 1/2 cups plain Greek yogurt

2 eggs

8 TBS unsalted butter, melted and cooled

1 tsp vanilla

1 tsp lemon zest

2 Tbs. lemon juice

1 cup blueberries tossed in 1 Tbs flour

(if using frozen, rinse until water runs clear/ on paper towel…no flour)

1/2 cup raspberries

Topping:

5 Tbs. butter, melted

1/2 c. sugar

1/2 cup flour

1/2 cup oatmeal

1/2 tsp sea salt

1 tsp vanilla

Glaze:

3 Tbs. lemon juice

1 cup confectioner’s sugar

Preheat oven to 375 degrees. Grease (spray) muffin tins. Prepare batter by combining the flour, sugar, baking powder, salt, baking soda together in a large bowl. In a medium bowl, combine the yogurt, eggs, vanilla, zest and lemon juice. Mix the wet ingredients into the dry. Now fold in the butter. Add the berries (gently) and mix just until combined. Spoon the batter evenly into  Prepared muffin tins. I made 20 muffins.

Make the Crumb Topping by combining all of the ingredients and using your fingers, sprinkle each muffin with the mixture.

Bake the muffins until they are golden and a toothpick comes out cleanly (for about 23-28 minutes). Cool in pans on racks.

While the muffins are cooling, prepare the glaze by mixing the confectioner’s sugar with the lemon juice. Be sure it is smooth and whisked well. When the muffins are room temperature, use a fork and drizzle the glaze on top of the muffins. Ta-dah…done!

What did I love about this recipe? I love raspberry and lemon together and the addition of blueberries is delicious and pretty!

What didn’t I love about this recipe? Well, I don’t ususally go for three part recipes, but I had these ready to go in a snap!
