Peanut Butter Chocolate Chip Cookies

Sorry I have been out of the loop  on the blog  lately. My Mom was here from Pennsylvania and I wanted to give her 100% of my attention. We had the most wonderful visit and spent an amazing week catching up and just being together. We got her hair cut (a big deal if you know my Mom), went to the beach,

and hung out at home with Kev and the kids. I love that woman and miss her already!

We ran out of cookies while she was here so I whipped up a batch while she was outside in the sun thawing her bones from the brutal winter they had back east. I thought she would like these…and she did!

Peanut Butter Chocolate Chip Cookies

1/2 cup chunky peanut butter

1/2 cup Crisco

3/4 cup brown sugar

3/4 cup white sugar

2 eggs

1 1/2 tsp. baking soda mixed with 1 tsp. hot water

1/2 tsp baking powder

2 1/2 cups flour

1 tsp salt

2 tsp vanilla

1.2 ounce vanilla pudding mix (half a box… If you don’t have it in your pantry, just omit… No biggie)

1 1/2 -2 cups semi sweet chocolate chips

Preheat oven to 375 degrees. Line cookie sheets with parchment paper. In a large bowl, mix the peanut butter, Crisco, brown sugar and white sugar until combined. Add the eggs. Now add the baking soda and water mixture and the baking powder. Mix well. Add the flour, salt, vanilla, pudding mix and chocolate chips. Combine.

Scoop onto the baking sheets and bake about 10 minutes or until golden brown. (Use your judgement…if you like them darker, cook them longer, if not, decrease the time!)

What do I love about this recipe? I love that it is made in one bowl…fast cleanup.

What don’t I love about this recipe? Nothing. Chocolate and Peanut Butter…who doesn’t love that!?
