I feel like I have served my husband leftovers for too many days in a row. I feel kinda bad about that so tonight I am throwing together some ingredients that can’t miss. The best part is that from start to finish, this meal takes about 30 minutes or less. (Hint…always keep rotisserie chicken in the frig as a fast meal add-in!)
Pasta with Chicken and Sun-dried Tomatoes
1 lb pasta, cooked and drained
1 cup grated 2 or 3-blend cheese
1-2 lbs seasoned chicken breast or rotisserie chicken, chopped
3 cloves garlic
2 Tbs. olive oil
1 onion, diced
1-2 cups cherry tomatoes, halved
1 cup parmesan cheese, grated
chopped parsley for garnish (optional)
1 tsp salt
1/2 tsp pepper
After draining the pasta, return to the pot and add the cheese. Stir to combine. While the pasta and the cheese are partying together, heat the olive oil in a saute pan. Add the onion and saute until the onion is nearly translucent. Add the garlic and cook until the onion and garlic are cooked through. (do not overcook the garlic). Add the sun-dried tomatoes, chicken, salt, and pepper to the onion mixture. Pour on top of the pasta, add the halved cherry tomatoes and gently combine. Sprinkle with the parmesan and chopped parsley.
What do I love about this recipe? I love that it is so easy to throw together. If you buy pre-shredded cheeses and the rotisserie chicken that is already off the bone (Costco) it is even easier!
What don’t I love about this recipe? Well, I am not eating carbs right now and can’t have this for dinner with my family. I am pretty mad about that right now…I might have to have a forkful just to say I had some!
