Golden Beets

I have ordered beet salad many times at restaurants and am always so happy that I did. It seemed like such a treat seeing that I’d never made it at home. Everything changed the day I saw Golden Beets in my produce section. I brought those beauties home, gave them a good scrubbing, diced them and roasted them. They were so tasty on the salad but would have been just as good on their own as a side dish. Yum! Give them a try! (bonus…no stained fingers!)

Golden Beets

3 golden beets, scrubbed, diced into 3/4 inch cubes

2 Tbs. olive oil

salt and pepper

Preheat oven to 400.  Toss the beets with the olive oil, salt and pepper. Spread evenly on a baking sheet.  Bake until tender…about 20- 25 minutes.

What did I love about this recipe? I love finding a new veggie and making it at home.

What didn’t I love about this recipe? Nothing!
