Roasted Pineapple and Pears

I went to Costco recently and really loaded up on the fruits and veggies. Then I remembered…um…there are only 3 of us living here at the moment…and usually only two of us eating dinner. The day when I was going to start having to really using the produce before it spoiled was nearing. Yikes!

We always grill pineapple in the summer so…oh yeah….broiling fruit works too! So, before that sweet pineapple could know what happened to her, she was cleaned up and waiting for the oven!

Roasted Pineapple and Pears

***Begin this one 1/2 hour before you bake***

1 large pineapple, cored and sliced into wedges

2-3 pears, cored and quartered

juice of one orange

2 Tbs brown sugar

salt and pepper

Line your baking sheet with parchment. Put the sliced fruit on the baking sheet. Squeeze an orange over the fruit. Sprinkle the brown sugar on top and lightly mix until everything is covered. Lightly salt and pepper. Let sit for a 30-60 minutes.

When ready to bake, preheat the broiler to 425 degrees.  Put under the broiler and watch carefully until golden and caramelized. Remove from oven and sprinkle with coarse salt.

Serve. Yum.

What did I love about this recipe? I love baked pineapple every bit as much as cold. The roasting just makes it so sweet and delicious. It is such a great addition to a dinner plate!
