I think I have to say that Delicata Squash is my favorite of the winter squash. It is so easy to slice open, a breeze to scoop the seeds out of, and only takes about 25 minutes to cook through. It is kind of fun to see that big barrel of the different squash to experiment with them. I like to slightly season then roast mine and then season them again after I get them out of the oven.
Roasted Delicata Squash
2 Delicata Squash, halved and seeded
2 Tbs maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
Preheat your oven to 400 degrees. Line your baking sheet with parchment paper (for easier cleanup). Lightly brush your squash with olive oil then season with salt and pepper.
Bake for about 30 minutes or until fork tender. Remove from oven and let sit for about 10-20 minutes until it is cool enough to handle.
While it is cooling, Mix the remaining ingredients in a small bowl then you can eat this one of two ways.
1.Scoop out all the flesh from the inside of the squash with a spoon then mash it all together with the maple mixture and serve… OR
2. Simply pour the maple mixture over the top of the squash and let everyone fend for themselves dealing with the squash! 🙂
What did I love about this recipe? It was so fast and easy and was super tasty. Next time I will add some freshly squeezed orange juice to the mixture because I have a hunch that will be great too!
