Our son, Danny, asked if he could come home for breakfast today before work. I was so excited because we don’t get to see him as often as we used to (because he no longer lives here), so of course I offered anything he wanted for breakfast at 6:30! He chose waffles! So, waffles it was! I sifted the dry ingredients last night and this morning, I just threw together the wet ingredients and mixed it up together before he got here. They were tasty! I love the smell of waffles in the house! And I love that my baby boy came home for breakfast! ♥!
2 c. flour
1 tsp. sea salt
4 tsp. baking powder
2 Tbs. sugar
1 Tbs. raw sugar
2 eggs, separated
1/2 c. buttermilk
(or sour milk…add 1-2tsp lemon juice to 1/2 c milk)
1 c. milk, room temp
1/4 cup butter, melted
2 tsp vanilla
1 tsp cinnamon
Preheat waffle iron.
In a large bowl, sift the flour, salt, baking powder and sugars.
In a different clean bowl beat the egg whites until they are stiff. Set aside.
To the dry ingredients, add the wet. When combined, gently fold in the egg whites, being careful not to let all the air out of them.
Using a cup measure, pour onto greased, hot, waffle iron and cook until done. Serve with sifted confectioner’s sugar, maple syrup, and/or berries.
What do I love about this recipe? Freshly made waffles are the best. Although I tried not to eat them (watching calories) I had to try it to be sure it was good!♥
What didn’t I love about this recipe? I think if I was making this for at least another hungry adult, I’d consider doubling the recipe.
