Cilantro Greek Yogurt Dressing—YUM

My friend was telling me about a Greek yogurt dressing she found the other day that was quite good. I knew I didn’t want to go searching for it so I figured I’d try to make one on my own. If you don’t like cilantro, try it with basil or Italian parsley (flat leaf). I am sure it would be great. Next time, I am going to try this with half the olive oil and see if it makes a difference!

Cilantro Greek Yogurt Dressing/Dip

2 Tbs olive oil

1 cup Greek yogurt, plain (I used 0% fat)

1/3 cup honey

1 bunch cilantro, roughly chopped

1 scallion, roughly chopped

2 cloves garlic, chopped finely

1 Tbs. lime juice

1 Tbs. lemon juice

1 Tbs. apple cider vinegar

1 tsp salt

1/2 tsp pepper

1/2 tsp ancho chili powder

Combine all ingredients in a small blender and mix until smooth. Keep in frig and allow to meld for at least 2-3 hours.

What did I love about this recipe? I really prefer to make my own salad dressing. It tastes better and I know what is in there. Look at your dressing labels and I bet you can’t pronounce half the ingredients! I might be wrong, but that doesn’t seem like a good thing!

What didn’t I love about this recipe? Well, I liked it, but I don’t think it tasted as great day 3 as it did day 1. If you don’t like cilantro or Greek yogurt, it might not be your favorite…but I liked it!
