Hi All! It has been a while since I have posted anything baked so I thought I’d whip up a little something fresh from the oven. My poor husband…when I am on a fitness kick, he has to join right in with me and boy, does he miss his desserts! ANYWAY… these are sweet and hit the spot. I added some healthy flax and Greek yogurt to take the place of extra butter calories. It is moist and we thought it was yummy! Try it!
Now…all of these must leave the house tomorrow. I don’t want them near me!
Maple Pecan Bars
1/2 c. oats
3 Tbs. butter, melted
3/4 cup brown sugar
3 Tbs. Greek Yogurt (use 6 Tbs butter if you don’t have)
1/2 cup real maple syrup
2 Tbs. ground flax
1 tsp vanilla extract
1/4 tsp maple extract (opt)
1 cup flour
1 cup pecans, chopped
1/4 c. dates, chopped (or raisins if you prefer)
Preheat oven to 350 degrees. Line an 8 x 8 inch baking pan with parchment long enough so the sides are overhanging and spray with cooking spray. Set aside.
In a mixing bowl, combine the brown sugar with the butter. Add the egg and mix until combined. Add the Greek yogurt, syrup, flax and extracts. Stir. Add in the oats, flour, chopped pecans, and dates.
Bake 30-35 minutes or until a toothpick comes out clean.
What do I love about this recipe? It came together pretty quickly and i like the addition of the dates to it. Plus, the combination with the maple syrup was goooood!
What didn’t I love about this recipe? Well, I am more of a chocolate dessert kind of gal, so I can generally pass on desserts without chocolate. This was great…but it would be outstanding with chocolate!
