Well, aren’t these a fun find? I heard about these from my friend, then saw them being used on “Chopped” (FoodNetwork) and when I saw them in the store, I immediately grabbed them. After I brought them home, I had to explain why I didn’t just get the regular orange ones. I don’t know! I just had to try something new! So…here we are!
2 lbs. rainbow carrots, peeled and sliced
2 Tbs. butter
1 Tbs. honey
1 tsp ground cinnamon
1/2 tsp kosher salt
1/4 tsp freshly ground pepper
Put the sliced carrots into a saucepan and cover with water. Cover pan. Bring to a boil on high heat and cook until fork tender, about 10-15 minutes. Drain and add the remaining ingredients. Mix well until all those pretty little carrots are covered with YUM!
What did I love about this recipe? Well, I love to try new foods and these didn’t disappoint. They are pretty to look at and taste great! Try them, you’ll like them!
