Roasted Cauliflower

Wow! It has been years since I have made cauliflower! It isn’t that I don’t like it…I just find it a bit boring and bland. No one in my house has ever raved about loving cauliflower so it was just one of those things that fell by the wayside. On a recent trip to Costco, however, I decided to throw a bag of the florets into my cart for kicks. Guess what? We really liked them this way! Turns out that roasting really makes every veggie taste better, doesn’t it??? I doubt my veggies will ever see a saucepan ever again…….

Roasted Cauliflower

1 large head cauliflower, cut into medium-sized florets

3 Tbs. olive oil

2-3 cloves garlic, minced

3 Tbs. balsamic vinegar

1/2 tsp kosher salt

1/2 tsp freshly ground pepper

1/2 c. freshly grated parmesan cheese

Mix everything above—except the parmesan– in a large bowl. Let sit for an hour or so.

About 35 minutes before serving, preheat oven to 425 degrees. While the oven is preheating, line a baking sheet with foil. Put ingredients on the lined sheet then bake for 15 minutes. Remove from oven and stir in the cheese and bake for another 10 -15 minutes until fork tender.

What did I love about this recipe? I love that I made cauliflower again! It has been so long since I made it and it was really good like this!

What didn’t I love about this recipe? Nothing really. Next time I might mix broccoli in with it to give it more color.
