Cranberry Pecan French Toast Casserole

Hi Gang! Guess what? I had some friends for breakfast yesterday. Actually, they brought breakfast to me for the most part. I had a little knee surgery and couldn’t drive to our annual Gift Exchange so they brought it to me. Don’t I have some amazing friends? (YES!) Aren’t I blessed? (YES!) Anyway….because I am me and can’t just chill and do nothing, I had to make up a new recipe for the event…actually two…the scone recipe I will share in a few days and this one. I loved this one and it is now my favorite breakfast casserole.  I will definitely make it for Christmas Morning. I hope you enjoy it!

Cranberry Pecan French Toast Casserole

1 12 ounce pkg Hawaiian bread, cubed

8 eggs

2 1/2 cups whole milk

3/4 cup sugar

3 Tbs. vanilla extract

1/4 tsp maple extract

1-2 cups whole cranberries

Topping

1/2 cup flour

1/2 cup brown sugar

1/2 cup butter, cold, cubed

1 tsp cinnamon

1/4 tsp salt

1/8 tsp cloves

1/8 tsp nutmeg

pinch allspice

pinch cardamom

1/2 cup pecans-roughly chopped

Night before serving….Grease a 13 x 9 inch pan.  Add bread cubes in an even layer. Set aside.

In bowl, combine eggs, milk, sugar, extracts. Mix well. Add the cranberries. Pour over the bread. Using a spatula, gently push the bread down so that the egg mixture saturates it. Cover and refrigerate it.

In another bowl, stir the flour, sugar, salt and spices. Using a pastry blender of fork, add the butter and combine until it looks like clumpy sand. Now add the pecans. Toss this in a Baggie and stick in the frig.

In the morning…Preheat the oven to 350 degrees. Sprinkle the casserole with the topping mix and bake 45-60 minutes, depending on how you like your casserole…loose or firm…

Optional….Serve with maple syrup or powdered sugar.

What do I love about this recipe? I am all about a make-ahead of time breakfast…esp on Christmas morning. This is definitely what I am making for my gang this year. It is was so delicious and so puffy and pretty just out of the oven. The cranberries make it even better so try to use them!!!!

What don’t I love about this recipe? I really liked the recipe. I asked my friends if I should lessen the topping because it seemed like a lot, but they all said “No…keep it all on there!”
