Pork Tenderloin with Herbs

I must admit. I am not a huge pork fan. HOWEVER…I made this the other night and really enjoyed it! I thought the combination of herbs was just right! Plus….it was soooo easy! (and quick…the entire tenderloin was done in 45 minutes or less!)

Pork Tenderloin with Herbs

1 tsp garlic powder

1 tsp dried oregano

1 tsp ground cumin

1 tsp ground coriander

1 tsp dried thyme

1 tsp sea salt

1/2 tsp ground pepper

1/2 tsp onion powder

1/2 tsp dried parsley

1/2 tsp dried mustard

2 pork tenderloins (can use only one), room temperature

1 tsp garlic, chopped finely

2 Tbs olive oil

Preheat oven to 450 degrees.

Mix first 10 ingredients (dried herbs) together on a plate. Coat the pork tenderloins with the mixture. Be sure to coat the sides. You can use your hands to be sure it is coated well.

In a large cast iron pan, heat the pan and olive oil on high. Add the chopped garlic. Sear the pork on all sides, about 10 minutes total. Now put the entire pan into the oven and bake for about 20 minutes or until done. (internal temperature should read no less than 145 degress…we prefer ours around 150). If you don’t have an oven-safe skillet, use a baking pan.

What did I love about this recipe? I loved the spices on it. I thought they were perfect.

What didn’t I love about this recipe? Well, I thought I would have said the pork! But it was good! I might try this spice blend on chicken next time we have it!
