Pineapple Egg Breakfast Casserole

Hi All! Here is another breakfast casserole for your busy mornings this season. Unlike the savory Bacon and Egg Casserole I posted the other day, this one is sweet. I’ve made it for both Christmas and  Easter. It isn’t a “make the night before recipe…” but it is easy to prep the bread the night before and then just throw it all together in the morning before you bake it. I hope you like it!

Pineapple Egg Breakfast Casserole

This is a sweet breakfast casserole that is fast and easy to throw together!

8 slices of whole wheat (or Hawaiian) bread, cubed

2 cups of crushed, unsweetened pineapple

1/4-1/2 cup butter, melted (your choice here)

3/4 cup brown sugar

4 eggs, beaten

1/2 tsp vanilla

1/2 tsp salt

Preheat the oven to 350.

Grease a 9×9 inch baking pan. Combine bread and pineapple. Put into prepared dish.
Whisk the butter, sugar, eggs, vanilla and salt together and pour over the bread. Bake 40 minutes or until set.
