My gang loves potatoes…baked, broiled, mashed, fried…you name it, they like them. I thought I would try a new twist on plain mashed potatoes by using a ricer to give them a great texture. I also used 2 kinds of potatoes to shake it up a bit more. It was fun to try something different and they were delicious!
Crazy, Mixed -Up Potatoes
3 large sweet potatoes, baked until fork tender
3 large Yukon gold potatoes, peeled, cut into 2 inch pieces, boiled until tender
1 bulb garlic, roasted
3 Tbs butter
1/2 cup milk
1/2 cup Greek yogurt, plain
Freshly ground pepper
hot sauce, optional
Remove garlic from skins by squeezing the roasted. bulb until all “meat” is out. Set aside. Remove skins from sweet potatoes. Cut into 2 inch pieces. To a large mixing bowl, press the cooked sweet potatoes, Yukon potatoes, and roasted garlic through the potato ricer. Add the Greek yogurt and butter to the potatoes. Using a large, rubber spatula, stir the yogurt and butter into the potato/garlic mixture. Now add milk until it is the consistency you like. Season with salt and pepper. (optional hot sauce if you like a bit of a “kick” to your potatoes.)
What did I love about this recipe? I loved the texture!
What didn’t I love about this recipe? It could use a bit of a kick…I don’t like spicy, but I might add some hot sauce next time to see how it goes over.
