Wow! Thanksgiving is over already. Hard to believe it has come and gone, isn’t it? I hope you all had a beautiful time with your family and friends. Ours was quiet but fun and so good to have all the kids home and laughing together. I love that.
If you are like me and spent most of the week in the kitchen last week, the last thing you want to do this weekend is to cook! I did make up a large batch of these, however, because it is the time of year when people pop in and you need a little something special alongside the cheese plate, or you need a little hostess gift. I bought a large bag of pecans at Costco and made a whole bunch of these. They are so good and not overly sticky-sweet. I hope you like them!
1/3 cup sugar
2 tsp pumpkin pie spice
1/2 tsp ginger
1/2 tsp sea salt
1 egg white
1 Tbs vanilla
4-5 cups pecans
2 Tbs. honey
Preheat oven to 250 degrees.
Mix the sugar, pumpkin pie spice, ginger and salt in a small bowl. Set aside.
In another bowl, add the egg white and whisk it with the vanilla until it is bubbly. Add the sugar mixture to the egg white mixture and stir together. Now, add the pecans. Mix with a spoon until everything is coated. Stir in the honey.
Put on a foil lined baking sheet and bake for an hour. Cool then store in a cool dry place.
What do I love about this recipe? These are so great without being greasy. They were gobbled up as they were cooling on the counter. I will double this next time and give as gifts at Christmas.
What don’t I love about this recipe? I liked it as is, but I am betting some of you would like it kicked up a bit with some cayenne pepper added to the spices!
