Okay, Okay! I admit it! I am not a huge “ginger” or “gingerbread” fan. I do love the smell of the gingerbread though. It definitely makes the house smell like the holidays are rolling in. I have a couple of good friends and a husband who love ginger recipes! I made these with them in mind. They are a good, simple, basic cookie. I really like the ease of the recipe and that you can make the dough in the morning and bake it up in the afternoon. They are pretty on the table as well. Enjoy!
Soft Ginger Cookies
You will be chilling this dough before you bake it,so no need for preheating the oven!
2 1/4 Cups flour
1 cup brown sugar
1/2 cup butter, softened
1/4 cup shortening
1/4 cup molasses
1 tsp baking soda
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
1 tsp vanilla
1/2 tsp salt
1/4 cup white sugar
Beat the butter and shortening in with the sugars until well combined. Add the molasses, egg, and vanilla.
To a separate bowl, add the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Mix together with a spoon. Add the dry ingredients to the wet a little at a time so you don’t have a flour shower! Mix til combined.
Chill for an hour or so and then shape the dough into 1 inch balls and roll in the white sugar. Place 2 inches apart on parchment lined cookie sheet. I flattened mine slightly with the bottom of a glass, but you may want to try a batch in the dough balls, unflattened. They will spread…don’t put too many on the sheet or you will have a pan of one cookie!
Preheat oven to 375 degrees. Bake in the preheated oven until the cookies are set…8-10 minutes.
What did I love about this recipe? It was a good, basic cookie. It was super easy. It would be a great recipe for the kids to make!
What didn’t I love about this recipe? I was hoping they would be puffier, but I’ll keep looking for a puffy ginger cookie recipe!
