What a lovely long weekend! I had the house to myself yesterday…husband was golfing, daughter was away and I was doggie sitting so I kind of wanted to stay home with the pups. I decided to make a kitchen day out of it and go to town on a few new recipes…or spin-offs of some old standbys. My kitchen looked like a bomb exploded with everything EVERYWHERE, but MAN…with the exception of the broccoli I made first, the house smelled GOOD! I’ll share these recipes in the next week or two.
First up is a new spin on broccoli. I always roast it, so that wasn’t new…but tossing it with the lemon zest with the olive oil was! So was the squeeze of fresh lemon juice before serving…it really livened up the dish! Hope you like it!
Roasted Lemon Broccoli
2 lbs broccoli florets, cut smaller if not in smaller pieces
4 Tbs olive oil
2 cloves garlic, chopped finely
zest of one lemon
juice of one small lemon
1 tsp salt
1 tsp pepper
Preheat oven to 400 degrees.
In a large bowl, mix everything but the broccoli. Now add the broccoli and mix it until everything is covered in the oil mixture. Place on parchment lined baking sheet and roast until fork tender, about 30 minutes or until fork tender.
What did I like about this recipe? I really liked the broccoli with lemon. The lemon added a nice “zing” to the broccoli!
What didn’t I like about this recipe? I think next time I make this, I will stir it at least once while it is roasting. I like the little brown edges on the broccoli, but I bet some people don’t!
