In my opinion, the only thing in the world that is better to eat for dessert than chocolate might be chocolate and salt together. I don’t know why it is so magical…it just IS! I recently got tired of the same old brownie recipe that I have been making for years and the boxed brownies I made in a pinch, and decided to try something new. I think I came up with a winner! Enjoy!
(These are the “fudgy” kind of brownies…not the cake type)
1 1/2 sticks butter
3 ounces dark chocolate (I used 72% cacao)
1/2 c unsweetened cocoa
2 cups sugar
3 large eggs
2 tsp vanilla extract
1/2 tsp instant espresso powder
1 cup all purpose flour
1/2 tsp sea salt or fleur de sel
Preheat your oven to 325 degrees. Line an 8-inch, square, metal, cake pan with parchment (or foil). Drape it over the edges. Lightly butter (or use nonstick spray) the paper.
In a large saucepan, melt the butter with the dark chocolate over very low heat, stirring occasionally. Remove from the heat and add the cocoa. Mix thoroughly. Now add the sugar and mix thoroughly. Add the eggs one at a time and mix thoroughly after each addition. Add the vanilla and espresso powder. Mix. Now add the flour. Mix thoroughly and be sure to scrape down the sides of the pan so that all the flour is incorporated.
Pour the batter into the pan and be sure that it is smooth and even. Gently and evenly, sprinkle the sea salt over the top of the batter. Swirl the salt into the top of the batter with a knife.
Bake on the center rack in the oven for approximately 35 minutes or until the edge is pulling away a bit from the sides of the pan and a toothpick inserted into the center comes out (almost) cleanly. Let the brownies cool in the pan on a rack. When cool, refrigerate until they are firm. Lift by the parchment paper to get the brownies out of the pan. Cut into squares. Serve at room temperature.
What do I love about this? Three words. Fudgy. Chocolate. Salt. Need I say more?
What don’t I love about this? Well, I think certain family members in my home enjoy nuts in their brownies. So, I think I need to bake another batch and include the dreaded pecans. (don’t get me wrong…I love nuts…just not in my brownies!!!) Also…these are fudgy brownies…not cake-like. I like them like this…my husband prefers them cake-y.
